Classic Veggie Bolognaise Sauce

Makes

6 – ¾ cup (180 ml) servings

Use this traditional style sauce with your favorite pasta, as a filling for lasagna or over rice.

Ingredients:

 
1 tbsp     (15 ml) olive oil
1              (100 g) small onion diced
1              (100 g) small green pepper diced
2 cloves minced garlic
3 c           (750 ml) water
1 pkg      (150 g) HotHuck’s Italian Veggie Ground
1c            (250 ml) tomato sauce
  Italian style seasoning or fresh herbs to taste

Preparation:

Heat oil in heavy bottomed pot.  Sauté onion, green pepper and garlic add water and bring to a boil. Stir in HotHuck’s Italian Veggie Ground and simmer 5 more minutes on medium heat. Stir in tomato sauce and seasoning.
Serve over pasta and sprinkle with fresh Parmesan cheese.

Think of this as just a beginning; adjust the ingredients to make your own special sauce.

Option:

For Baked Veggie Bolognese layer the bottom of a large casserole dish with cooked pasta, next the veggie pasta sauce then top with a layer of grated mozzarella cheese and sprinkle with herbs.  Bake in a preheated 350­º F oven until cheese is hot and bubbly.

Mediterranean Vegetable Stew

Makes:

6 -1cup (250 ml) servings

A hearty, great tasting, Mediterranean influenced dish loaded with vegetables.

Ingredients:

 
1 tbsp     (15 ml) olive oil to sauté vegetables
½ med.            onion, sliced
½ med.            green pepper sliced
½ med.            zucchini sliced into ¼ - ½” rounds
½ med.            globe eggplant, cubed
1-2 garlic cloves, crushed and minced
1  28oz    (796 ml) canned diced or whole tomatoes with juice
1 c           (250 ml) water
1 pkg.     (150 g) HotHuck’s Italian Veggie Ground

Preparation:

Heat oil in a heavy bottomed pot.  Sauté the onion, green pepper, zucchini, eggplant then garlic.  Add tomatoes and water. Bring to a boil and continue to cook until eggplant is tender (5 minutes). Stir in HotHuck’s Italian Veggie Ground, return to boil then reduce to a simmer for 5 minutes.  Serve with pasta, rice or French bread

Sloppy Joes

Makes:

6 – ¾ cup (180 ml) servings

Great lunch for kids and kids at heart.

Ingredients:

 
1 tbsp     (15 ml) vegetable oil
1 clove minced garlic
1 small onion diced
1 green pepper diced
1 c           (250 ml) tomato sauce
1/3 c       (80 ml ketchup
1 tbsp     (15 ml) Worcestershire sauce
2 c           (500 ml) water
1 pkg.     (150 g) HotHuck’s Italian Veggie Ground
   
6 large toasted buns

Preparation:

Heat oil in heavy bottomed pot. Add onion and green pepper, sauté until onion is translucent then sauté garlic. Add tomato sauce, ketchup, Worcestershire sauce, and water Bring to a rolling boil. Stir in HotHuck’s Italian Veggie Ground. Simmer on medium heat for 5 minutes, covered. Turn off heat and let sit 5 minutes.  Serve ladled over toasted buns.
